Every once in a while I take periods where I only eat raw foods. For me the spring, summer or fall season works best. In the winter time I crave more warm food.
First time I tried to go raw, I decided to go for 30 days straight. I was really afraid to fail before I started. I was afraid to lose my discipline to cravings. I prepared the first three days with what I should eat and found some great recipes that looked good and filling to me.… The first three days were surprisingly easy. I was never hungry and the food tasted amazing. After the third day I just planned day ahead and found out that I needed much lighter food than I thought and it was pretty easy to be all raw. My food preparation took much shorter time than preparing cooked food and things were just so simple. I totally recommend you to try it!
We often crave pasta and therefore I thought you might like this recipe. Spaghetti made out of zucchini, how cool is that! Spaghetti without grains; – no gluten, no headache, no bloating, no weight gain, no problem. You can use it as an all raw meal or as a side dish to cooked food ❤.
Recipe:
- 1 squash (peeling is optional),spiralized
- 1 box cherry tomatoes, cut in half
For the spicy cream sauce you will need:
- 35 gr. pine nuts
- ½-1 avocado (how creamy do you want it)
- ½ a zucchini (cut into big cubes)
- 1 garlic clove
- ½ -1 fresh cayenne pepper or dried cayenne powder to your taste – be careful it is spicy (I like mine a little spicy, but not to much)
- Handful fresh basilica
- Handful fresh chives
- Handful fresh sage
- Salt to taste
All sauce ingredients are blended together in a food processor until smooth and creamy.
Toss the spiralized zucchini and the sauce together and top with tomatoes (and other vegetable or nuts if you like).
