I love Guacamole and use it almost on a daily basis. It is so filling and tastes good with almost everything.
Avocado, the main ingredients in Guacamole, are very filling, because it contains fat. I know, I might scare you away now, but read further. The fat in avocados are actually good for you. It helps the body to prevent unwanted inflammation and therefore might rather help you slim down, instead of adding on pounds. The good fat, as well as the base chemistry of avocados, can help the body to find it´s natural balance.
Enjoy this delicious recipe as an appetizer, as a dip, as a topping on crackers, with tortilla chips, with food, alone or in salads. It will always spice up your life
Ingredients (a good medium portion for two):
- 3 mature avocados, peeled, seeded and diced
- 1 big or 2 medium sized seeded and diced riped tomatoes
- ½ – 1 diced red onion (depends on your taste for onion)
- Juice from one lime
- 1 clove minced garlic (more if you like it garlicky)
- Handful chopped cilantro/coriander (I use even more)
- ½ teaspoon salt
- ½ teaspoon cumin
And if you want to challenge the taste buds some more, I suggest you add the following:
- ¼ – ½ teaspoon cayenne pepper
- ¼ – ½ jalapeno pepper, seeded and minced (or chili)
Direction:
In a large bowl place the avocado, salt and lime juice and toss together. Drain, and reserve the rest of the lime juice. Add the cumin, (and cayenne if you like). Then, fold in the onions, garlic, tomatoes, and cilantro/coriander (and jalapeno if you prefer spicy). Add the reserved lime juice. If you want more deeper and spicier taste let it sit at room temperature for ½ – 1 hour and then serve. But if you can´t wait, it´s ready to be eaten and I promise a good taste.
Another way you might like it, is to mass the avocados, but add the tomatoes and red onion diced.
If you have a hard time following a recipe, just add everything together and enjoy. Life is simple, so don´t complicate it
