If you like peanut butter, you will love this treat. It’s filled with freshness from the raspberries, fullness from the peanuts and sweetness from the chocolate. I can’t wait to get my slice when I come home <3
Bottom layer:
- 1 cup almonds
- 1/2 cup raisins
- 4 dates
- 1/2 cup frozen raspberries
Middle layer:
- 1 bag salted peanuts (appr. 1 cup)
- 2 tbsp. coconut oil
- 1/3 cup maple syrup
- 6 dates
Top layer:
- ¼ cup coconut oil
- ¼ cup pure organic maple syrup
- ¼ cup raw cacao powder
This is how you do it!!
Bottom layer -
Mix everything together in a food processor until it is well blended and sticks together. Line a cake tin with non-toxic greaseproof paper and pour the mixture into it. Press the mixture onto the paper.
Middle layer -
Put all ingredients into a food processor and pulse until completely smooth. Pour the mixture on top of the bottom layer.
Top layer -
Add all ingredients to a small saucepan on a low heat and stir until it is well combined and resembles chocolate sauce. It might take few minutes to get it perfect - thick and creamy. Spread the chocolate sauce on top of the middle layer.
Place the cake into the freezer for a couple of hours. When you take it out cut it into slices. If you are not eating it all at once, keep the sliced cake in the freezer. Now you will have a delicious slice waiting for you whenever you are in the mood for something sweet and filling.
