I always have some energy bites waiting for me in the freezer. And when I get to hungry to think straight, my mind start screaming for something sweet, that will give me immediate energy. And at that moment I can´t even think about an apple or a banana, even though it would help. I want it to be something heavier and creamier. That is why I always keep few different types of healthy sweets in my freezer to choose from. Here is one delicious recipe that you have to try. It literally melts in your mouth.
Recipe:
- 150 gr of shredded coconut (plus extra for coding)
- 1 bag (130 gr) of dried mango, soaked in water for 20-30 minutes and then drained.
- 5 tablespoon coconut oil
- 25 gr maple syrup (or agave syrup)
- 1,5 teaspoon lemon zest
Mix everything together in a food processor and blend for a minute or two.
Pour around ½ a cup of shredded coconut in a dish, form the dough into small ball bites and coat them by rolling them in the shredded coconut.
Keep the bites in the fridge or freezer in an air-tide container.
