It is hard to believe that this breakfast cereal is healthy. It has this sweet, filled with sugar kind of taste .
This is a perfect breakfast on it´s own, blended with almond milk (or milk of your choice), or as a topping on porridge, yogurt or chia seed pudding. Add some fruits or berries like banana, apple, blueberries or raspberries on the top and enjoy a delicious, healthy, filling breakfast.
Here is what you need:
- 200 gr dried dates
- 1,5 cup oatmeal (jumbo rolled oats are great, but not necessary)
- 1 cup nuts/almonds (your choice, blend together or use only one type)
- 1/4 cup pumpkin seeds (or your choice of seeds)
- 2 tbsp honey
- 2 tbsp coconut oil or olive oil
- 1 tsk vanilla (optional)
- ¼ tsk sea salt
I soak the nuts, seeds and/or almonds in water the night before I make this breakfast. If you want to make it now and don´t have soaked nuts, don´t worry.
Simmer the dates and vanilla in 1 cm water until the dates get very soft. Then blend it to a paste consistency with a hand blender. Stir the remaining ingredients to the date mixture and mix well (If you like the nuts smaller, cut them before you blend them to the mixture)
Spread the mixture on a baking seed and bake for 20 minutes at 160 °C, then reduce the heat to 110 °C and bake until the mixture is dry and crispy (approximately 30 minutes more).
Leave to cool and keep in an air tide container.
For different taste add a tsp of cinnamon or cacao power to the mixture.
You rather want it RAW?
If you are a raw foodist, mix the dates until it looks like a ball in your food processor, add the coconut oil or olive oil instead of the water. Stir the remaining ingredients and mix well. Then spread on a dehydrating sheet and dehydrate for 12 hours.
