A definitely a meal on its own or a delicious side dish. A salad that is very easy to make, so don’t fear the long ingredient list.
Make a big portion and keep the rest in the fridge, to enjoy for the next days to come.
Cook separately and according to instructions the following:
- ½ cup quinoa
- ½ cup green lentils
- 1 cup edamame
Chop the following for the salad:
- 1 big red bell pepper
- 1 cup cucumber (diced)
- 1 cup red cabbage
- 1 big carrot (shredded)
Blend for dressing:
- ¼ cup tamari sauce (or soy sauce)
- 1 tbs sesame seeds
- 1 tbs rice wine vinegar
- 1 tbs sesame oil
- Salt and pepper to taste
Chop the following and blend together with the dressing
- 1 green onion
- ¼ cup coriander/cilantro
- 2 cm fresh ginger (grated)
Blend the quinoa, lentils and edamame together with the chopped vegetable and the blended dressing……AND you are ready to dig in
It takes approximately 30-40 minutes to make this salad. Make a big portion to have enough for the next 3-5 days. This way you can eat healthy and save time.
Keep the salad in an air-tight container.
