This is one of my favorite salads. It is a perfect meal on its own (and then I might add an avocado to it) or a delicious and fresh side dish with almost every meal. It gives you this “I am doing something good for myself” kind a feeling and it totally spoils your taste buds.
Ingredients:
Peel the mango and cut it into small bite size cubes, along with the bell peppers and cucumber. Leave the middle of the cucumber out (eat it while you make the salad) – because the salad might get to watery if you use it. Chop the chili and the red onion into extra small bites.
Mix everything together in a bowl and add the lime juice, maple syrup and Coriander/cilantro to the salad.
I make my salad with coriander/cilantro, but my experience has taught me, that people either love coriander/cilantro or they hate it. If you are one of them that can´t stand it, use mint instead.
You will not regret trying this recipe out.
